I. Bread & Pastry Production NC II (20 days)
COURSE DESCRIPTION: This course deals with the introduction to the basics of baking including tools, equipment, and ingredients used in baking. It also delivers basic knowledge on baking and its components.
II. Bartending NC II (36 days)
COURSE DESCRIPTION: Consists of competencies that a person must achieve to operate a bar, provide wine service to guests in hotels, motels, restaurants, clubs, canteens, resorts and luxury liner cruise.
III. Food and Beverage Services NC II (42 days)
COURSE DESCRIPTION: This course consists of competencies that a person must achieve to organize food service operations and functions, plan and manage menu-based catering Perform side table preparations for different types of service.
IV. Housekeeping NC II (55 days)
COURSE DESCRIPTION: This consists of competencies that a person must achieve to prepare guest rooms, clean premises and equipment, laundry linen and guest clothes, provide housekeeping services and provide valet services to hotels, motels, clubs, hospitals, resorts, dormitories and luxury liners.
V. Cookery NC II (40 days)
COURSE DESCRIPTION: This course deals with acquiring knowledge and skills in cold kitchen preparation which includes sandwiches, sauces, salads and salad dressings, canapes, hors d ouvres, amuse bouche and cold meat and seafood buffet and cold meat and seafood buffet menus and other relevant cold appetizers. This course also deals with hot meal preparation. It includes knife skills, herbs and spices, tools and equipment and preparing hot foods in gourmet and ala carte service.
VI. Front Office Services NC II (55 days)
COURSE DESCRIPTION: This course/subject deals with the competencies a person must possess in order to be able to process reservation, processing registration and checking-in and checking-out of guests.
VII. Barista NC II (22 days)
COURSE DESCRIPTION: The competencies that a person must achieve to deliver food and beverage service operations in hotels, motels, restaurants, clubs, resorts, luxury liners and cruise ships. Specifically, it includes competencies in preparing and serving hot and cold coffee beverages to the guests.
